On my last night on Oahu, I had dinner at Morimoto, a beautifully designed, Japanese and American fusion restaurant by critically acclaimed Chef Morimoto. From the moment I walked in, the experience was stunning. We were seated out on the the terrace, overlooking the harbor, and were treated to a 5 course meal, each more innovative than the last. At Morimoto, presentation is everything. First course: Hamachi (on the left which is yellowtail) and Toro (on the right, a medium fatty tuna) Tartare. They were accompanied by 6 different garnishes in the center, some creamy and smooth, come crunchy, and some spicy, to further enhance the flavors of the fish.
