On my last night on Oahu, I had dinner at Morimoto, a beautifully designed, Japanese and American fusion restaurant by critically acclaimed Chef Morimoto. From the moment I walked in, the experience was stunning. We were seated out on the the terrace, overlooking the harbor, and were treated to a 5 course meal, each more innovative than the last.  At Morimoto, presentation is everything. First course: Hamachi (on the left which is yellowtail) and Toro (on the right, a medium fatty tuna) Tartare. They were accompanied by 6 different garnishes in the center, some creamy and smooth, come crunchy, and some spicy, to further enhance the flavors of the fish. The fruit is Yamamomo which helps clear the palate to prepare for the next course.Second course: Wagyu Beef Carpaccio, in hot truffle oil, ginger, and yuzu soy… this was heaven.Third course: Foie Gras Chawan Mushi (a warm and very rich custard) topped with duck breast, fresh wasabi, and sweet dashi soy. I’ve never had anything like this and it was the perfect preface to our main course. Main Course: Thai Curry Snapper with mussels, sea asparagus, and caramelized bananas. Usually not a fan of snapper, but the way this was prepared, the flavors and rare combinations of curry and caramelized bananas, made this so well balanced and fantastic. Dessert: Chilled Soufflé Cheesecake with guava ice cream, graham cracker crumbs, and assorted fruit! Also not usually a cheesecake person because I don’t love it’s density and texture, but this was so light and rich, and paired with the guava ice cream, was the perfect way to end this meal.
